Perfect Hard Boiled Eggs

Eggs are a popular source of protein, the downside is having to peel them. After some testing, this is the process that worked best for me. Less fresh eggs seem to peel better, though I personally I buy the best quality food I can. If you haven’t had farm fresh eggs, you haven’t really tasted an egg.

Up to 6 eggs

  • Gently place eggs in pot
  • Fill pot with water so eggs are covered (roughly 1 inch)
  • Add 1 tbsp salt
  • High heat, 13 minutes, until water is boiling (really bubbling)
  • Remove from heat
  • Cover, 13 minutes
  • Drain hot water
  • Add ice and cold water, 5min (the colder the better)
  • Peel (wash using same cold water)

12 eggs

  • Same as above, except use 2 tbsp salt and water will take longer to boil (about 16 minutes)
  • You many only want to peel a few if you won’t be eating them within a couple of days.
